I’ve always had a keen interest in health, fitness and nutrition which I guess increased over the years as I headed into “mid-life”.

Back in 2017 I was diagnosed with Multiple Sclerosis, (MS), which is a neurological condition affecting your nerves. Your immune system normally protects you by fighting off infection, but in MS it attacks these nerves, which control many different parts of your body, meaning that each person’s experience of MS will be different. Once diagnosed, MS stays with you for life, but the condition and its symptoms can be managed.

I won’t be defined by the MS and have adopted the approach that this can and will be managed through lifestyle for as long as possible.

So, I switched to a plant-based diet in 2018, to compliment my health and lifestyle choices and can honestly say I discovered a new-found love of cooking and have not looked back as I feel amazing most of the time!
